Bacon Cheeseburger Stuffed Mushrooms

I spotted this mouthwatering low-carb creation on a non-low-carb blog, and it made my renewed enthusiasm for non-starchy foods kick into overdrive.


Butter-sauteed mushrooms stuffed with ground beef, pepperjack cheese, bacon, and mayo, topped off with french fried onions. And you know all about my love for french fried onions.

I can't wait to make these.

Don't say that! I was going to complain about the same thing and make Tracey offer up an alternative vessel. I've done green peppers stuffed with things like this before, but is there anything else? Those cheese crisps you mold into a bowl over the bottom of a mug?
Oh there are tons of stuffable veggies! You can cut a zucchini the long way and make a stuffed zucchini -- winter squash could be interesting, too, but you'd have to adjust cooking times. You could stuff roma tomatoes. Japanese or Indian eggplants .... and on and on
OMG I have to make these next week. These look wonderful. I am so excited that it would classify me s weird. LOL
I'm not big on mushrooms but these have my mouth watering!!!LOL!

I thought these were stuffed baked potatoes when I first saw the pic! They look delicious :)
Wow - these look awesome. The only thing I'd do different is replace the mayo with Greek yogurt. Definitely going on the to do list.
these look yummy, do you stuff them with raw meat or cooked?

I don't have the recipe, but I'd say cooked. Even if you baked these in the oven, you'd want to start out with meat that's already been browned and the grease drained.
