Also, I thought Blender Coconut Pie was going to be something that only needs a blender and therefore was make-able by me. I feel lied to.

Yeah. Another one of those things that doesn't appeal to me AT ALL, but I shared it just for you.

And who says you need to bake it?! Just make the filling and go to town.
You don't have an oven? Not even a microwave? If I didn't have either, I think I'd whip that baby up and fry it in a skillet! ;) If you like coconut, this is yummy and satisfying!
I'm always with my boyfriend, whose Manhattan apartment has one of those glorious galley kitchens with the stovetop but no oven. I know there's such a thing as skillet cornbread, but even that's baked in the oven. By golly, though, I WILL fry that thing!
