The Easiest Low-Carb Dessert Recipe Ever

Since I spend most of my time in my boyfriend's tiny apartment in Manhattan with no freezer and no oven, dessert recipes that are actually doable for me are entirely too scarce. So when I saw this suggestion in the comments section of one of the other low-carb blogs Tracey and I read, I was intrigued and added the ingredients to my shopping list.

Here's the entire recipe:

Mix sugar-free pudding powder into full-fat Greek yogurt.



I bought the 17.6 oz. Fage Total Plain and mixed about a quarter of a packet of Jell-o butterscotch pudding into it.

The tang of the yogurt was still present, but the pudding powder made it plenty sweet. I can imagine using chocolate protein powder, a little natural peanut butter, or some calorie-free Walden Farms strawberry syrup in future mixes.

And the best part is that the Greek yogurt is only 7g carbs for 1 cup. It does have 7g sugar for 1 cup, but yogurt is great for my gut, and I'm never going to eat a whole cup of the stuff at a time, anyway.

Excellent idea! And you KNOW I'm gonna be dipping some strawberries into this stuff.

Pistachio yogurt, here I come.

The best thing about yogurt for dessert is that I have no desire to overeat it. While I could continually eat ice cream or pudding until I EXPLODE, a small serving of yogurt is all I need to feel satisfied.

You're totally right about the yogurt thing. Dairy just coats my throat in a way that totally satisfies that palate-cleansing we need.

I told Ash about the cream cheese frosting today. I need very little of that to be happy, too, and indeed, more than a little of it almost makes me sick with its sweetness yet doesn't make me crave anything else 10 minutes later. LOVE THAT.
According to the Go Diet Authors - low-carb diet by the way - 1 cup of yogurt only has 4 grams of carbohydrate. Why? The bacteria "eat" the lactose and that is not accounted for in the nutritional analysis. So enjoy your yogurt. I do. I love it!

Nice! Thanks for sharing. I was a little worried about that 7g sugar on something like the Belly Fat Cure that only allows you 15g per day, but now I'm going to subsist entirely on flavored Fage.
I'd rather add fresh fruit and a bit of sweetener. Aspartame in those sugar free jellos and puddings is so unhealthy! Greek yogurt, however, is pure delight!

The knowledge of the aspartame tugs at me a little every time I make SF Jell-O and pudding, but they're just so easy and delicious, and it's the only place I still occasionally allow myself to have anything aspartame-sweetened. I know some people experience actual side effects from consuming it, but I've never had a problem, and for now, I feel like it's worth it to me to be able to have all those easy flavors at my disposal.

If Jell-O started using sucralose or something stevia-based in their mixes, though, I would be ALL OVER that.
This is just how I feel. Except I also let myself have a can of Diet Mountain Dew every day.

Today, my CVS had buy one, get one free Sobe Lifewater. I'm thinking about buying the place out.
I almost picked up a container of the FAGE today! I thought, "Hmm, only 7 for the whole container - surely there's something I could do with that!" I will definitley be researching the "only 4grams" theory..oh let it be true! oh let it be true!!!

The 7 carbs makes sense, because it's not exactly sweet on its own. It kind of has that tangy flavor you find in foods like sour cream, which makes it great for thickening savory dishes and great as a base for sweet dishes. Let us know if you think of anything great to mix it with!
According to GO Diet and Dana Carpender (holdthetoast.com), 1 cup of yogurt is 4 carbs.
I would prefer some strawberry casein protein powder (maybe half a scoop) to mix with that Greek yogurt. Serve it with a handful of strawberries.....delicious and decadent dessert, yet low in carbs....great for a bedtime snack and high in protein to keep you anabolic.
