Low Carb Confidential: Low Carb Zucchini Lasagna (To get zucchini "noodles" without a mandoline, you can use a vegetable peeler. They won't end up perfectly uniform, but they should work just fine.)

trulypat: Cream of Pumpkin Soup (This gluten-free recipe uses evaporated milk to avoid both lactose and nut allergens, but in the interest of keeping it low-carb, I'd swap that stuff out with unsweetened almond milk, heavy cream, or a combination of the two.)

Wow, and here I felt bad about having nothing to contribute your list. This is huge!

I want those chicken enchiladas so bad, and I've been trying to figure out if it'd be wrong of me to just eat a bowl of brownie batter.

That black bean salad is so lovely it actually makes me want to eat vegetables, too. I overlook the ease and flavor of bean salad way too often.

I know! There was so much good stuff. I think fall is inspiring people to cook.

I thought you might scold me for posting a recipe with "tomatoes" in the title, but that black bean salad looked crazy-good to me, too. (You know I'm leaving the tomatoes out of mine, right?)
ohhhhhhhhhhh I have to make the Creme Brulee. That looked so decadent. Thank you for sharing these each week. It is something I look forward to each week. You give me such wonderful ideas and introduced me to new low carb blogs that I have never seen before.
