I'm pretty interested in that avocado pudding; I didn't realize coconut milk was so low in carbs until I checked it out just now. I don't think I've ever had avocado as dessert, so I'm a little scared, but I love the idea of a natural pudding.

I haven't had avocado desserts, either, but since this one was actually the SECOND one I saw this week (I can't remember where the other one was, but it involved chocolate), I thought I'd go ahead and post this.

The blogger actually says it isn't a fantastic dessert, but it's good enough, healthy, low carb, and interesting. And since I can't eat an entire avocado's worth of guacamole by myself before it goes bad, I'm excited to find other things to try to make with it.
It seems like the natural creaminess of an avocado would contribute really well to a dessert, and I like the idea of being able to pack in all that potassium, fiber, etc. into something other than guacamole, which isn't worth eating without chips for me.
Agreed. Despite the creaminess, I can imagine avocado just tasting a little faltter than, say, heavy cream in dessert, but I think it would be totally worth it for the health benefits.
That was obviously supposed to be "FLATTER". Bleh.
